Shrimp and grits are a favorite around here but they can’t just be any grits. They have to be decadent and creamy and bonus points for cheesy! That where these come in and boy are you going to love these! I could take a side of cheese grits with just about any meal. But shrimp and grits or even any seafood with grits is one of my all time favorite meal. If a menu has a dish over grits that’s usually what I go for and am hardly ever disappointed. Ingredients for cheese grits: 1 medium cauliflower head 2 TBSP unsalted butter 1/2 cup heavy cream 1 cup shredded mild cheddar cheese 1 ounce cream cheese Salt and pepper to taste Method for cheese grits: Break your cauliflower head up into florets and then use a knife to quarter the florets. Grab half of the cauliflower and place into a food processor and pulse 3 times until cauliflower is all about the same size but not turned into mush. Dump this into a medium sized microwave safe bowl Repeat with the rest of the cauliflower Add the rest of the cauliflower to the same bowl. Add butter to bowl Place a microwave safe plate over the top of your bowl and microwave for 4 minutes Carefully remove bowl and stir the butter until completely mixed and place plate back over the bowl and back into microwave Microwave for 6-7 more minutes or until tender (no one wants crunchy grits)! Carefully remove from the microwave. Add all other ingredients and stir well. Your grits should stick together and be all melts and gooey resembling rice Krispy treats when mixing together. Once fully combined add Salt and pepper and serve! Ingredients for the shrimp: 1 bag of large shrimp 1 TBSP Tomato pasts 1 TBSP ghee 1/2 TBSP minced garlic About 1 TBSP of Ragin Cajun seasoning- more depending on how spicy you like your food Dried Parsley (optional) Method for New Orleans shrimp: Add ghee to pan on stove and heat to medium high heat. Once pan is hot add your shrimp Cool until half way done and add the rest of your ingredients. Stir until fully coated and continue to cook until the shrimp are done. Serve over grits or anyway you’d like and sprinkle with parsley over top! This is the consistency you want your cheese grits, when mixing you should be able to see and feel the cheese holding it all together. Yum yum yum!! These shrimp are so easy to make and so versatile! Serve over cheese grits, serve in an omelette (favorite), serve chilled over a salad, so many options! You can serve your cheese grits as a side, as a full dish with shrimp, for breakfast under Chilean steel head or another pan fried fish with a poached egg, with chicken, this is probably my favorite side dish we’ve ever made and it’s so easy! A serving of our shrimp is 9 shrimp and a serving of my cauliflower grits is 1 cup.
